The history of Chipotle could be traced back to 1993, when Steve Ells (Ells), a graduate from the Culinary Institute of America, in Hyde Park, New York, opened the first store near the University of Denver campus, with a loan of US$85,000 from his father. Ells’s dream was actually to launch a fine-dining restaurant and he opened Chipotle to make the money to fund this restaurant.
