Introduction

In March 2022, the world’s largest Latin American chicken chain, Pollo Campero S.A. (PC) announced plans to open 250 retail outlets in the US by 2026. PC had around 80 restaurants in the US, of which 60 were corporate stores, 17 were franchise units, and four were digital kitchens. The company planned to add 120 corporate units and 70-80 franchise units.
